Welcome to salad season! And this here is the creamiest, dreamiest green avocado dressing we’ve ever made. It stars ripe green avocado, tangy lemon, and our secret ingredient: avocado oil! Avocado oil brings in an essence of pure avocado, at the same time being a fantastic oil to add to your pantry.

We used DeLallo’s extra-virgin avocado oil: they’re a family business that makes Italian specialty foods. (You may remember us visiting DeLallo’s HQ in Pittsburgh a few months ago.) Here we served it on this tasty tossed salad recipe with homemade croutons. Here’s a bit more about avocado oil, why we stock it in our pantry, and this delicious creamy avocado salad dressing!

What’s avocado oil and why use it?

This vegan avocado dressing recipe uses both a fresh avocado and DeLallo’s extra-virgin avocado oil, which we now stock in our pantry! Avocado oil is becoming more and more popular, but there is still some mystery around it. Here’s some info about avocado oil:

  • Avocado oil comes from the first cold press of the fruit, and has all the health benefits of raw avocados. It’s loaded with healthy monosaturated fats and antioxidants, and is a powerhouse of vitamins and minerals.
  • The flavor is nutty, buttery, fruity and mildly sweet, just like a fresh avocado.
  • The oil is ultra-versatile with a high smoke point, perfect for drizzling, dressing, dipping, marinating and high-heat cooking.
  • DeLallo avocado oil is made with fresh handpicked Chilean Hass Avocados and is produced in Chile. Each bottle contains the oil of about 12 whole avocados!

How to make creamy avocado dressing

This avocado salad dressing recipe is very easy to make and takes only a few minutes to blend up. Keep in mind, though, that an immersion blender or small smoothie blender is easiest for this recipe. Because of the small quantity of the dressing ingredients, this is difficult to make in a regular blender. You may be able to make in a standard size blender, but definitely not in a large-sized Vitamix. (We tried. And failed!)

When creating this recipe, we wanted to make a vegan avocado dressing. So instead of using something like Greek yogurt or sour cream, which many other avocado dressings use, we went simple: just avocado and avocado oil. Then we added lemon for some tang, green onion for some savoriness, and a bunch of spices to round it out. Oh and cilantro to keep it green and beautiful! (Omitting the cilantro results in a yellow-y dressing.)

How to serve this avocado dressing

This creamy avocado dressing turns out so, so delicious: it looks brilliant green from the cilantro, and its flavor is tangy, savory, salty, and rich all at once! We served it with this Best Tossed Salad recipe, and it made for the perfect side salad. All the colorful veggies, crunchy homemade croutons and fluffy greens were a fantastic compliment to the creamy avocado dressing!

Description

This creamy avocado dressing is bright green, tangy and savory, perfect for drizzling on salads and bowl meals! It takes only a few minutes to blend up.


Ingredients

Scale
  • 1 green onion
  • ¼ cup cilantro leaves, lightly packed
  • ½ cup mashed ripe avocado (1 medium avocado)
  • 3 tablespoons Delallo Avocado Oil
  • ¼ cup water
  • ¼ cup fresh lemon juice (1 large lemon)
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon each garlic powder, onion powder, cumin, black pepper, and kosher salt

Instructions

  1. Slice the green onion. Tear off the cilantro leaves and tender stems and measure out ¼ cup lightly packed.
  2. Safely remove the pit from the avocado and mash enough for ½ cup.
  3. Using an immersion blender or small smoothie blender, blend together all ingredients except the avocado until the onion and cilantro are fully incorporated. Then add the mashed avocado and blend until smooth.
  4. Serve immediately or refrigerate 1 to 2 days.

    I need low sodium recipes and noticed that most of your salad dressings do not have the sodium content listed. Is there a reason for that, or am I just overlooking it?

      Hi! Our nutrition analysis doesn’t include sodium. A teaspoon of kosher salt has ‭1,920‬ mg of sodium.
