Are you a mushroom lover? Mushrooms bring incredible flavor to any dish: they’re filled with umami, the fifth flavor that’s meaty and savory. Actually a fungus, not a vegetable, mushrooms may help with heart health and disease prevention. But the best reason to eat them: they’re darn delicious. Take it from me, a previous mushroom hater: once I opened my mind to the juicy portobello: I never went back.

Here’s a list of the most delicious mushroom recipes! There’s our fan favorite mushroom pasta, featuring tender mushrooms with fresh herbs and creamy goat cheese. Types of mushrooms

There are many types of mushrooms! Most of the recipes above use cremini or portobello, but there are many more varieties. Here’s a little overview of types of mushrooms you’re most likely to encounter at the grocery store:

  • Button mushrooms (white): A small mushroom that’s easy to find at the grocery. It’s a young stage of a portobello and has the most subtle flavor.
  • Baby bella or creminiSmall mushrooms with a brown top and a robust savory flavor. They’re a stage older than button mushrooms and a younger version of the portobello mushroom.
  • Portobello (portabella or portabello): The largest mushroom that’s available at grocery stores, it’s a mature version of the cremini! It has a uniquely meaty flavor and is fantastic stuffed or grilled.
  • Shiitake mushrooms: A mushroom native to Asia with a delicate shape and an earthy, savory flavor. Common sauteed, in stir fries and ramen.
  • Lion’s mane mushrooms: A white fungus with a hair-like texture that bears resemblance to its namesake. The flavor is delicate, tender, juicy and meaty: try them sauteed or in sandwiches.
  • Oyster mushrooms: Mushrooms shaped like a cluster that have a savory flavor: almost like seafood.
  • King Oyster Mushrooms are large and meaty types of oyster mushrooms; they work well as a meat substitute.
  • Maitake Mushrooms: are small with feathered edges and an earthy, peppery flavor; they’re great sauteed or roasted
  • Enoki mushrooms: Long-stemmed white mushrooms that look like long strings, they’re common in Japanese cuisine.

Description

Looking for the best mushroom recipe? Here’s THE perfect sauteed mushrooms recipe! It brings out the best savory flavor with lemon and fresh herbs.


Ingredients

Scale
  • 16 ounces baby bella (cremini) mushrooms
  • ⅓ cup chopped fresh thyme and oregano*
  • 3 tablespoons olive oil**
  • 2 tablespoons fresh lemon juice
  • ½ teaspoon kosher salt
  • Fresh ground pepper

Instructions

  1. Meanwhile, rinse the mushrooms and wipe off dirt. Then slice them. Chop the fresh thyme and oregano.
  2. In a saute pan or skillet, heat the olive oil over medium high heat. Add the mushrooms and cook for 2 minutes, stirring often (the mushrooms will start to release their liquid at this point).
  3. Add the herbs and kosher salt and pepper and cook another 4 to 5 minutes, stirring occasionally, until most of the liquid is cooked out and the mushrooms are tender. (Taste to assess doneness.)
  4. Turn off the heat and add lemon juice and stir. Taste and add another pinch salt as necessary.

Notes

*We highly recommend using fresh herbs here for the best flavor; do not substitute dried. 

**Step it up and add a richness with butter if you’d like!
