Are you ready to celebrate? Champagne has been a festive drink for centuries. Of course, you can just pop the cork and drink it straight up (which Alex and I do, often!). But why not try a champagne cocktail? The tangy, bubbly sparkling wine is perfect with all sorts of flavors, from lemon to St Germain to cranberry. Even just adding one or two ingredients to champagne really alters the flavor and adds depth. And of course, holding a glass says, “Hey, I’m someone with sophistication and class!” Ready to toast?

This list of champagne cocktails includes Prosecco cocktails too! You can really use any type of sparkling wine in these champagne cocktail recipes. The most popular types of sparkling wine outside of champagne are:

  • Prosecco: an Italian sparkling wine. It’s a little sweeter than champagne and has lighter bubbles. It’s fruity and flowery, with notes of apple, pear and lemon.
  • Cava: a Spanish sparkling wine. It has more citrus notes, and is a little more savory and less fruity.

What type of champagne should I buy?

With champagne and most alcohol, the higher the quality, the better the flavor. We use the rule: buy something in the medium price range, and you’re usually safe. That is: don’t buy the cheapest bottle. But don’t go overboard on the most pricey one either! Usually middle of the road in price is a good quality bottle.

Description

Here’s how to make a peach bellini! This sparkling Italian cocktail pairs peach puree and champagne or Prosecco for bubbly fresh flavor.


Ingredients

For the peach puree

  • 3 large ripe peaches or 1 pound frozen peaches (makes enough for 6 drinks or 1 bottle of champagne)

For each bellini

  • 2 ounces (¼ cuppeach puree
  • 4 ounces (½ cup) champagne or Prosecco (6 servings in bottle)
  • For the garnish: peach slice (optional)

Instructions

  1. Make the peach puree: If using fresh peaches, peel them according to How to Peel Peaches. Then slice them in half and and use your fingers to pull out the pits. Puree the peaches in a food processor or blender until a smooth puree forms. Taste and if your peaches aren’t perfectly ripe and sweet, add a little sugar, honey or maple syrup, then blend again. Refrigerate for up to 1 week, or freeze for longer storage.
  2. To make a bellini: Add the peach puree to a champagne flute or glass. Add a splash of champagne or Prosecco and stir gently to combine. Then add the remaining champagne or Prosecco. Garnish with a peach slice.
